8 Ounces mascarpone cheese (make sure the brand you buy is gluten free)
4 eggs, separated
1/4 cup of sugar
2 tablespoons of dark rum (We used Appleton Estate Signature)
8 to 10 Ounces of espresso
Cocoa powder for dusting
Method
- Beat 4 egg yolks with sugar, then add the rum and mascarpone.
- Beat 4 egg whites until stiff. Gently fold the egg whites into the yolk, sugar, and mascarpone mixture.
- Quickly dip the first layer of ladyfingers in coffee and place them in your baking dish. Note: Avoid over-soaking so as to keep from disintegrating the cookies.
- Using your spatula, cover the first layer of ladyfingers with half of the mascarpone mixture.
- Repeat steps 3 and 4: add another layer of espresso-soaked ladyfingers and top them with a final layer of the mascarpone mixture.
